Easy egg salad recipe with lettuce and olive oil
Ingredients
- 3 hard boiled eggs size "L" one egg size "L" is about 63 g
- 2 heads of fresh romaine lettuce
- 1 stem of green onion
- 1 tbsp olive oil extra virgin
Instructions
- Boil 3 eggs size L for at least 10-15 minutes. During this time...
- Tear the lettuce into small pieces. Do not cut it with a knife, tear it with your hands. Pour the torn lettuce into a bowl.
- Cut the green onion into small pieces. Add to the bowl and mix well.
- Chop the eggs and pour them into the bowl. Add the salt and mix well. Add the olive oil and mix again.
- Eat right away or refrigerate for later.
Notes
- Optionally, you can add other veggies - chopped tomatoes, cucumbers, radishes, olives, etc.
- Different types of cheese also tie in well with the recipe. Experiment with meats like bacon, chicken, salami, tuna or something along those lines.
- I don't like putting mayonnaise or anything like that, it adds too many calories and makes the recipe more complicated.
