Cottage cheese sandwich with tomatoes, cucumbers and prosciutto

One of the main benefits of the recipe is that it is affordable and easy to prepare. The cottage cheese, bread, tomatoes and cucumbers are cheap and can be found in any supermarket.

The sandwich is also pretty quick to make – it shouldn’t take more than 10 minutes (not counting the grocery store run, duh).


Experiment with the vegetables and spices

Tomato, cucumber and chopped green onion are more than enough for me. Try adding avocado slices, lettuce, kale, etc. and see if you like it.


The ideal bread for the sandwich

I love the cottage cheese sandwich with whole wheat sesame bread, but you can use any bread – white, diet, french, baguette, toaster bread, ciabatta etc. I like it open, but choose whatever tickles your fancy.

Note: Expect higher carb content if you decide to top it with another slice of bread.


Suitable meats


Besides prosciutto, the cottage cheese sandwich tastes great with chopped steak (chicken, veal, pork), salami, beef jerky (must be easy to chew), roasted bacon, etc. I’ve even experimented with fish – tuna, salmon, mackerel, etc.

Problem is, not everyone likes fish with dairy (like cottage cheese). Unless you know what you’re doing, stick to the meat.


Cottage cheese alternatives

A great alternative to cottage cheese is Philadelphia cream cheese (original, seasoned, high-protein or light). For a more diet-friendly approach, use cottage cheese and lower-fat meats.

You should also definitely try using cream cheese made with our heirloom starter.


The cottage cheese sandwich goes well with…

  • Mayonnaise. This will explode the calorie content though. Skip if you’re on a diet (or shave calories from another dish).
  • Butter. Spreading butter on the sandwich slices elevates the taste to another level (also the calories). Be careful, though. The flavors of butter and olive oil may clash.
  • Mustard;
  • Ketchup;
  • Sauces – dip that bad boy in sauces/spreads with garlic, avocado, cheese, yogurt, dill, Sriracha, hummus, etc.

Something for drink? The cottage cheese sandwich goes well with cold airan (whipped Bulgarian yogurt and water), kefir, carbonated drinks (cola, soda), fruit juices, nectars, etc.

  • 200 g cottage cheese, creamed
  • 3 slices of bread
  • 80-100 g prosciutto (or other meat)
  • 1 tomato
  • 1 cucumber
  • 1 green onion
  • 1 tsp olive oil
  • Salt
  • Black pepper


  • Pour the cottage cheese into a bowl. Add salt, 1-2 pinches of black pepper for taste and some finely chopped green onions.
  • Add half a teaspoon of olive oil. Mix well until it turns into a paste.
  • Spread the paste on a slice of bread. Add tomato and cucumber slices. Finish with 20-30 g prosciutto or other meat of choice on each sandwich.
  • If desired, toast the sandwich on a grill or toaster.
  • Store in a refrigerator or freezer bag, the cottage cheese goes sour quickly in warm weather.
